Description:
In 2008 we offer not only full culinary training in our complete commercial kitchen, but also training in aquaponics (integrated growing of tilapia fish and culinary micro-greens) in our greenhouse, organic square foot gardening, shitake mushroom growing and harvesting, olive oil herbing, organic food nutrition and mineral supplementation from culinary sea salts and much, much more. Our culinary training includes:. - Knife skills - Cooking techniques - Cake decorating - Soups & salads - Meat & vegetable cookery - Menu planning - Nutrition - Breads & pastries. - International cuisine - Sauces - Decoration - Pies, - Cookies.
In addition, we cover food history, different cultures and how it effects our cuisine.
Daily afternoon excursions to many Vermont food-oriented sites are also planned for residential campers including:
